Lingering heat builds between the dance of spicy chilis, softens beautifully with sweet garlic, shallot and onion and swings into herbtastic heights with thyme, oregano and bay leaf. | | The bold aromatics of Pardi Gras are a natural match for seafood perfection, but it can go on just about anything in need of a flavor lift. “Developing our signature Creole seasoning was the first thing I did when working on Strange Delight,” Ham says. “It would be the underlying flavor for so many menu items, so it was important that we got it right. I always knew I wanted to use Burlap and Barrel spices in this blend because of their unrivaled flavor and superior quality; they do most of the heavy lifting here.” | | Ham’s suggestion? “My favorite way to use Pardi Gras is irresponsibly.
