A limited packing of just 80 containers, this Jaggery carries the specific terroir of tropical Satara, India, a high-altitude mountainous region prone to monsoons that receives up to 60 inches of rain during heavier seasons. | | As we continue to source unique flavors from smallholder farmers all over the world, sugars are an important category to include in our mission toward reinstating equity and supporting food sustainability. The mass production of sugar to match growing demand historically involved enslaved labor and profit-driven cruelty. “Historically, sugar wasn’t the sickly sweet, ultra-refined white crystals we know today. The warm, rich, umami flavor of real sugar was used like clove, paprika or black pepper to add depth and complexity,” Ethan says. “In the same way the heat of a chili pepper can accentuate other flavors in a dish and make a bland meal more exciting, sugar was used to enliven monotonous foods of all kinds.” | | To us, Satara Jaggery tastes like a wash of peace and calm that’s quietly reminiscent of the comfort of sitting in the kitchen, watching grandma bake a pie. Its earthy sweetness is grounding and soothing, like cozying up indoors to watch a downpour cascade outside. It’s rich and balanced with subtle notes of fragrant ripe pears, sweet dried mango and toasty brown butter, with a honeyed hint of warm molasses. We hope the complexity of this Jaggery and all our single origin sugars can redefine the popular conception of what sugar can be. | | Made from fresh cane juice boiled down in traditional iron pots then whipped by hand into a soft streusel texture, it’s perfect in crunchy toppings for fruit crumbles or as a sweet garnish on yogurt and oatmeal. Bake it into cakes and cookies, add it to your vegetable vindaloo or salad vinaigrette, or stir it into your chai and coffee. Its minerality makes it feel very much like a sugar for adults and is our team’s sugar of choice for cold brews.
