Scapes are the tender, green flowering stems of young hardneck garlic plants (seen in the background of the picture above). To make this batch of pickles, Suresh and Carrie chopped up fresh garlic scapes grown in upstate New York and added only salt for a true salt ferment. After a few weeks of curing in a ceramic pot in the sunlight, Burlap & Barrel spices are added for extra flavor enhancement. Without using any added water or vinegar in this traditional Ayurvedic pickling process, the scapes retain their delicious crunch while taking on a naturally sweet finish. Frequently discarded as a secondary crop to the storable garlic bulbs, Suresh and Carrie are proud to work with these overlooked vegetables, spotlighting and preserving the scape’s satisfying crisp texture and its spring-like flavors of sweet onion, zesty garlic and chives.
