In villages across the island of Java, a collective of partner farmers scale towering coconut palm trees twice per day to collect nectar from the trees’ clusters of green flowers. The nectar is allowed to drip into bamboo tubes, which is then cooked and reduced to dark, sticky caramel in small batches. After it cools, it’s hand-pressed and sifted into a superfine powder.
