Dan recently shared a favorite from his new book with us: Pinsa Romana. Inspired by the Italian tradition of pinsa, the Italian word for “to press,” this unique pizza-like creation is made with a blend of rice and wheat flours, resulting in a delicate yet crisp crust with an airy, bubbly interior.

This is a great recipe for gaining confidence with long fermentation, practicing soft skills, and exploring new ways to make bread.
