You know what's funny about Chili's? Everyone has that one story. Maybe it's the time you discovered their Triple Dipper and realized you could basically have three appetizers as a meal (genius, honestly). Or perhaps it was that first bite of their baby back ribs-the ones with the jingle that's probably stuck in your head right now.
Founded by Larry Lavine in Texas in 1975, Chili's started as something pretty simple: an informal, full-service dining restaurant with a menu featuring different types of hamburgers offered at an affordable price. But here's the thing-they've managed to stay relevant for nearly 50 years in an industry where restaurants come and go faster than TikTok trends.
The secret sauce (pun intended) seems to be their willingness to evolve without losing their soul. In September 2017, Chili's dropped about 40 percent of its menu items to focus on burgers, ribs, and fajitas. Smart move, actually. Instead of trying to be everything to everyone, they doubled down on what they do best.
And it's working. In September 2024 Chili's announced, that its advertisement campaign is working, while other food chains in the USA still struggle to entice diners into their stores. Store sales increased 14.8 percent in the fiscal fourth quarter. Not bad for a chain that some people write off as "just another casual dining place."
What really gets me is how they've embraced the chaos of modern dining. Brinker currently owns, operates, or franchises 1,672 restaurants worldwide, but each one still feels like that neighborhood spot where you can grab a decent burger and watch the game. They've got the scale of a corporate giant but somehow maintain that "let's just hang out and eat too much food" vibe.
The menu's pretty straightforward these days-burgers, ribs, and fajitas. "Those are the dishes where Chili's has had appeal for over 25 years," says their chief marketing officer. Sometimes the best strategy is just admitting what you're actually good at.
