Serves: 6-8
Ingredients Base:
½ packet Tennis biscuits
75g Beautifully Butterfully butter
Filling:
2 cups Farmdale full cream milk
½ tablespoon Beautifully Butterfully butter
½ cup Merryfield sugar
½ teaspoon vanilla essence
1 Lodge Farms free range egg
1½ tablespoons White Mill flour
1½ tablespoons White Mill cornflour
Stonemill cinnamon, for garnish
Method:
1. To make the base, crush biscuits using a food processor
or using mortar and pestle, until they resemble coarse
breadcrumbs. Melt butter and combine, then press
mixture into a large tart pan. Allow to chill in fridge.
2. Boil the milk with the butter. While boiling, mix
remaining ingredients into a paste. Add to boiling milk
and stir until thick.
3. Pour mixture into pre-prepared biscuit base.
(Pour mixture onto an upside down spoon to avoid
disturbing base with the hot liquid.)
4. Sprinkle with cinnamon. Allow to cool for a few
minutes, then refrigerate until set.
