Ingredients

- 3 tbsp vegetable oil
- ½ tsp mustard seeds
- 60g chopped onion
- 1 tsp ginger, finely chopped
- 60g frozen peas
- 1 tbsp ground ginger
- 1 tsp ground cumin
- ¼ tsp red chilli powder
- ½-¾ tsp garam masala
- Juice of half a lemon (optional)
- Salt, to taste
- Splash of water
- 600g potatoes, peeled and boiled
- 4 tbsp fresh coriander leaves, chopped
- Packet of ready-made filo pastryMethod

- Roughly mash the cooked potatoes into large lumps. Heat oil in small, non-stick pan and fry the mustard seeds for about 10 seconds, or until they begin to splutter
- Add the onion and ginger and cook for 2-3 minutes over high heat. Add the peas, stir well and add the spices, salt and if using, the lemon juice – do not use the water. Cook for 1-2 minutes.
- Add potato and coriander and cook for 2-3 minutes. Taste and adjust the seasoning.
- Prepare the pastry on the Samosa Maker as set out on page 10 – "Instructions for Use".
