Ingredients:

- 1 jar New Season sliced potatoes, drained
- 2 slices of either streaky bacon or speck, finely diced
- ½ red onion, finely diced
- 1 tbsp butter
- 1 tbsp oil
- Cracked pepper and saltMethod:

- Drain potatoes and pat dry. Heat fry pan and add butter and oil.
- Add potatoes and fry over high heat until potatoes are golden brown.
- Remove from pan. Add bacon and onion, cook until golden brown.
- Add potatoes and season well with cracked pepper and salt.
- Cook until heated through. Serve immediately.
Whole Baby Potatoes 660g Preparation time: 10 minutes Cooking time: 3 minutes Serves: 4
Ingredients:

- 1 jar New Season whole potatoes, drained
- ½ small red onion, finely diced
- 2 rashes streaky bacon, finely diced
- ¼ cup white wine vinegar
- 1 tsp seeded mustard
- 1 tsp caster sugar
- 2 shallots, thinly sliced
- 1 tsp canola oil
- Salt and pepperMethod:

- Drain potatoes and cut in half. Pat dry.
- Heat pan, add canola oil, onion and bacon, then cook over medium heat for approximately 3 minutes, or until golden.
- Add vinegar, mustard, sugar, oil and simmer for 1 minute. Season with salt and pepper.
- Remove from heat. Add shallots and toss. Serve hot or cold.
