WHAT’S IN THE BOX?

Caspian & Strawberry Balsamic Compote

The bright color contrast of this pairing reflects the strength of these two flavors. Caspian–our natural rind tomme—has an earthiness and harbors a lovely dual-textured interior. A smooth cream line encapsulates an lemony core. By itself, it is a palate-cleansing cheese, but is amplified by Casa Forcello’s Strawberry and Balsamic Compote. This sweet, tart compote contrasts amazingly with Caspian’s earthy, lactic tones. Not only does this combination of Italian and Vermont flavors taste absolutely fantastic, but the color contrast is inviting and appealing to the eye, making it an ecstatic experience.

Bayley Hazen Blue & Pear Mostarda

Casa Forcello’s Pear Mostarda is an absolute favorite. By using locally sourced pears, candying them in their own juices, and adding a few drops of mustard extract, they’ve created a piquant and flavorful pairing for Bayley Hazen Blue. A blue cheese like no other, Bayley develops a toasted-nut sweetness and an anise profile that has earned a loyal following. The characteristic peppery flavor is subdued, allowing the flavors from the milk to emerge. By pairing Bayley with the pear mostarda you will create a vibrant whole-palate experience: the horseradishy sweetness from the pears blend with the smooth sweet cream character of the cheese that has quite a kick.

Whitney, Cherry Honey & Cacio e Peppe Taralli

If you like it, then put a ring on it! While we didn’t exactly put a ring on Whitney, we did encircle slices with a Mitica Cacio e Peppe Taralli. These aren’t like other crackers—they have a unique shape and a pleasantly crumbly texture that bring rich and deep flavors to every bite. They are the perfect pairing for Whitney–a smooth and pliable cheese made with methods that capture a true Taste of Place. Finish it off with dollops of Mitica Cherry Honey, which bursts with bright floral notes to have a complete bite that expertly contrasts texture and flavor.
