Sherry Gray & Chocolate Naive Durian: Milky & Aromatic
After a long wait, Sherry Gray's production has started again. This ash-ripened, double-cream medallion is a visual and sensory delight; under its stone-like rind hides a softened butter-like texture that coats the palate, giving way to flavors of cultured cream, button mushroom, and a warm, nutty finish.
We’ve paired this butter bomb with Chocolate Naive’s Durian bar. A fruit that has truly polarizing following, Durian is the “king of fruits,” a spiky delicacy from Southeast Asia with a distinct, pungent aroma. The fruit’s flavor is much different that is custardy, almost like a delcious slice of vanilla cheesecake.
The unique aroma of durian mixed with the cultured butter flavors and bright acidity of Sherry Gray are magical. As the flavors mix, you get the effect of drinking a tropical milkshake with a chocolatey finish.
