We don't often open the doors to our aging vaults. But on rare occasions, we take the time to let someone come in and help us share our story. When Serena approached us with genuine interest in tracing the process from grass to cheese, we had to say yes.
This video does something we often struggle with: how do we illustrate the big picture that spans from the pasture to the milking parlor to the creamery floor to the depths of our caves. She captured the full arc: the grass, the herd, the vat, the shelf. The slow, careful work of turning milk into something lasting.
Our founder and head cheesemaker Mateo Kehler says it best in the film: "We're basically concentrating the light of the summer sun in the green green grass. And in the cellar, we organize our production day after day. It's like a library of time."
That's what we're building here. A time capsule. Every wheel a record of a season, a herd, a specific patch of Vermont hillside and an authentic expression of place.
