Hi Food Lover,

My fellow food finder Alex, our resident cheese expert Lisa, and I—not to mention Zach and Trevor from Zingeman's Deli—just returned from the American Cheese Society conference in Louisville, Kentucky.

Yes, we ate a lot of cheese, but we also found time to visit our friends at:

If you're saying to yourself: "holy cow, that sounds like a whirlwind of flavor and friendship," you are absolutely correct.

But it's not just fun (though that's part of it): these producers are our friends. The whole point of visiting is to learn from each other, share our challenges, and leave with a deeper connection and a better understanding of the food we sell.

In many ways these are the most important people we work for—we represent them and the food they make. It's a big responsibility and we don't take it lightly, but it's pretty easy working for your friends.

A couple years ago, I got the chance to spend time with Antonio and his partner (in life and in business) Anna Marie up in the hills north of Rome. The have one of those "meet cute" stories with a very happy and delicious end, but I digress.

What makes their spreads divine? They mix them with the best nuts they can find (these pistachios are from Sicily), a bit of sugar and good olive oil instead of dairy. The result is an ultra smooth spread that sings with the nutty rich flavor of pistachios and nothing more.

The uses are many, but this time of year I think it's great as a dessert topping for panna cotta or with fresh goat cheese and berries. I'm trying to be summer-y with my suggestions, but its uses go all year round. And of course: many of us just eat it from the jar.
