Hey Neighbor, Several years ago, I fell in love with heirloom grains—especially heirloom corns. They have a flavor like no other grain. Modern-day hybrids and GMO varieties simply don’t compare in taste. And beyond flavor, I prefer to avoid genetically modified foods altogether. My top two favorite heirloom corns are Jimmy Red and Hickory King. There are many other excellent varieties out there, but those two hold a special place for me. We plant them in the spring and harvest in mid-to-late summer. Once harvested, I shell the corn, store it in the freezer, and take out only what we need to mill. 🌾Benefits of Growing and Milling Your Own Heirloom Corn🌾 Here are the main advantages as I see them: -

Sustainability. We always have access to our own grain supply. We store it in a cotton pillowcase in the freezer, so at any time we can process our own grits, cornmeal, or corn flour. Getting Set Up To do all of this, you’ll need some basic equipment. There is an initial cost to get started, but once you’re set up, it’s well worth it.
