Grocery List

1.5 pounds ground beef
90/10 1 white onion, thinly sliced
8 hamburger buns
1 teaspoon salt 1 teaspoon pepper
½ teaspoon garlic powder
8 slices
American cheese
Toppings of your choice

Directions

Separate the ground beef into 3-ounce, loosely-packed meatballs.
Preheat the griddle, flat-side-up, over two active burners for 10 minutes.
Check your temperature by sprinkling a few drops of water on the griddle. If that water dances, you’re good to go.
Lightly oil the cooking surface.
Make four small piles of onions, leaving plenty of room between each pile. Place a 3-ounce meatball over the onions and smash the burger very flat with a grill press.
Cook for 2 minutes, or until you see the edges browning very nicely. Flip, add cheese, and continue to cook for 1 minute.
Remove to a bun and repeat with remaining meatballs.
Assemble the burgers with your favorite toppings and dig in!

Pro Tips from the Lodge Test Kitchen

Parchment paper is your friend. Place a small piece of parchment paper between the grill press and your meatball to prevent sticking.
Leave plenty of room. If your burgers are too close, they will steam, rather than sear, and you’ll lose the magic of the maillard reaction.
Food cooks faster. With the direct contact of a grill press, you might need to adjust your cook time to avoid overcooking.
